Oatmeal Raisin Cookies

This is THE oatmeal raisin cookie recipe. I can assure you that there will be taste testers running to your kitchen once they get a whiff of these bad boys baking in your oven. My husband snuck six off the plate before I even finished baking the batch!

I normally prefer a chocolate chip cookie, but I promise you these are extremely addicting. I like to convince myself that they are “healthy cookies” because they contain oatmeal and raisins. We will go with that…

This recipe makes about 40-45 cookies. I like to bake some for the family, but then I have to send some off with my husband to bring to the firehouse otherwise I’d eat them all day long – next batch will be shared with our neighbors!

Ingredients

  • 2 cups all purpose flour
  • 1 tsp ground cinnamon
  • 1 ½ tsp kosher salt
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 cup unsalted butter softened
  • 1 cup sugar
  • 1 cup light brown sugar firmly packed
  • 2 eggs
  • 2 tsp vanilla extract
  • 2 ¾ cups instant oats
  • 1 ½ cups raisins

Instructions

  • Preheat the oven to 350°F
  • In a large mixing bowl, whisk together the flour, cinnamon, salt, baking powder, and baking soda. Set aside
  • Using a stand or hand mixer, combine butter, sugar, brown sugar, eggs, and vanilla. Mix on high until color is lightened
  • Gradually add in the flour mixture. Mix until blended, do not over mix
  • Mix in the oats and raisins
  • Scoop approx. 2 tbsp of the dough and place on a baking sheet and lightly flatten down with palm. Space each cookie approx. 1 ½" apart
  • Bake for 11-13 min, until golden (the perfect cook time for my oven is 12 min. I also do not recommend using multiple cooking racks in the oven. I put one cookie sheet in at a time to allow the heat to evenly distribute)
  • Remove from the oven and allow cookies to sit on baking sheet for 2 min before transferring
