BLT Salad

Sick of the traditional house salad? This BLT salad is one you’ll find yourself making more than once. It’s great for birthday parties, BBQs, and get togethers. I like to prepare it and keep it in the fridge for a quick weekday lunch.

When making the salad ahead of time, leave the dressing and cheese off to the side until ready to serve. No one likes a soggy salad or mushy shredded cheese!

Ingredients

  • 16 oz Ditalini noodles
  • 12 slices bacon cooked, chopped
  • 1 ½ cups tomatoes diced
  • 5 cups Romaine lettuce chopped
  • 1 ½ cups mayonnaise
  • ½ cup plain Greek yogurt
  • ½ tsp ground black pepper
  • ½ tsp red pepper flakes
  • cheddar cheese optional

Instructions

  • Cook noodles according to package. Drain and set aside
  • Cook bacon until crispy. Chop once cooled
  • Chop lettuce and tomatoes then combine in a large bowl. Once the noodles are cooled, add to the salad
  • In a small bowl, combine mayo, Greek yogurt, pepper, and red pepper flakes
  • Refridgerate until ready to serve
  • Sprinkle with cheddar cheese and add dressing as needed
