Carrot and Bacon Side Dish

This carrot and bacon side dish recipe always makes an appearance at our family holiday get togethers. The crunchy bacon and tender carrots make my mouth water just thinking about it!

  • 5 cups peeled carrots 1/2 inch slices
  • 1 cup crumbled bacon cooked
  • 4 tbsp butter
  • 2 tbsp packed brown sugar
  • 5 tbsp green onions thinly sliced
  • ½ tsp salt
  • ½ tsp black pepper


  • Boil peeled and cut carrots for 8-12 minutes (until they are tender)
  • While carrots are boiling, cook bacon until crispy
  • Drain carrots and add to large sauce pan with the butter
  • Crumble bacon and add in with the carrots
  • Stir in green onions, salt and pepper
  • Cook over medium heat for 5 minutes
