Cheeseburger Soup

This cheeseburger soup will hit the spot! It is the ultimate comfort food soup. The flavor is so satisfying and filling. Sunday football wouldn’t be complete without a bowl of something warm and this soup recipe will not disappoint!

The toppings are endless, we like to top it with pickles and bacon crumbles, but feel free to sprinkle cheese on top or add croutons for some crunch!

  • 1 lb ground beef
  • 2 tsp olive oil
  • 1 small onion chopped
  • ¾ cup celery chopped
  • 2 tsp minced garlic
  • 6 cup beef broth
  • 1 tsp dried basil
  • 3 medium potatoes chopped bite size potatoes
  • 14.5 oz can diced tomatoes undrained
  • 16 oz Velveeta cheese chopped into 6 cubes
  • 6 oz tomato paste
  • ½ cup ketchup
  • 4 tbsp yellow mustard
  • ½ tsp ground black pepper
  • 1 ¾ cups whole milk
  • bacon crumbles optional
  • hamburger pickles optional


  • In a large soup pot, heat olive oil over medium heat
  • Add chopped onion, celery and garlic. Cook for about 3 min
  • Add ground beef. Break up meat and cook until browned
  • Add beef broth, basil, and chopped potatoes. Bring to a boil and cook until potatoes are soft
  • Add diced tomatoes, Velveeta cheese, tomato paste, ketchup, mustard, and pepper
  • Once Velveeta cheese is melted, stir in milk
  • Serve and top with bacon crumbles and pickles (optional)
