Chili Lime Chicken with Creamy Garlic Penne

Chili Lime Chicken

  • 2 boneless chicken breast
  • ¼ cup olive oil
  • 3 tbsp lime juice
  • 2 tsp chili powder
  • 2 tsp light brown sugar
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • ½ tsp cayenne pepper
  • salt & pepper


  • 16 oz penne pasta
  • 4 tbsp butter
  • ½ chopped yellow onion
  • 2 tsp minced garlic
  • 2 tbsp all purpose flour
  • 1 cup chicken broth
  • 1 cup milk
  • 4 oz cream cheese cubed
  • 1 pint cherry tomatoes cut in half
  • 2 tsp parsley
  • salt & pepper to taste
  • parmesan cheese topping


  • Boil water for penne noodles, cook and then drain
  • For the chicken, whisk together oil, lime juice, chili powder, brown sugar, cumin, paprika, onion powder, garlic powder, cayenne pepper, and dash of salt and pepper
  • Trim the chicken and cut lengthwise into chicken tender strips
  • Add chicken to the mixture and let marinate for a minimum of 15 minutes
  • In a skillet, cook both sides of the chicken then transfer to a plate and set aside
  • In a skillet, melt butter over medium heat
  • Add onion and cook until tender
  • Stir in garlic and flour
  • Whisk in chicken broth and milk
  • Add cream cheese cubes and stir until melted
  • Mix in the pasta and tomatoes
  • Sprinkle with parsley, parmesan, salt and pepper
  • Add chicken on top prior to serving
