Peanut Sauce Chicken

Chicken smothered in a peanut sauce? YES, PLEASE! If I could live off peanut butter, I would. This chicken recipe is a highly requested one around here. It is a tad bit time consuming if you are making the zucchini noodles yourself, but you can always opt for the store bought ones if you’re looking to save time or if you don’t have the spiralizer equipment.

Although the recipe uses zoodles instead of a heavy pasta, it is still extremely filling. Just make sure you do not overcook the zoodles otherwise it will be very watery and soggy. We like a little crunch in each bite!

Ingredients

  • 2 lb boneless chicken breasts cubed chunks
  • 1 tbsp coconut oil
  • ½ cup teriyaki sauce
  • 1 cup peanut butter
  • 1 tbsp low sodium soy sauce
  • 2 tsp garlic
  • 1 tsp crushed red pepper
  • cup peanuts chopped
  • ½ cup cilantro chopped
  • Sriracha optional
  • 4 medium zucchini spiralized noodles
  • 2 tsp coconut oil divided

Instructions

  • Spiralize all 4 zucchini into thin zoodles using a spiralizer. Set aside
  • Trim the chicken breasts and cut into cubed chunks
  • Heat 1 tbsp of coconut oil over medium heat. Add chicken chunks. Cook until chicken is almost cooked through
  • Lower the heat. Add teriyaki sauce, peanut butter, soy sauce, garlic, crushed red pepper, peanuts and cilantro. Continue to mix so peanut butter does not burn
  • In a separate large pan, heat 1 tsp of coconut oil over low medium heat. Add half the batch of zoodles and heat up for 5-7 minutes until zoodles are soft, but crunchy (over cooking zoodles will cause them to be soggy and watery)
  • Repeat the above step for the remaining half of the zoodles
  • Once chicken is cooked through, transfer on top of zoodles. Drizzle with Sriracha and sprinkle with additional cilantro and peanuts, if desired. Note: the sauce will be very thick, it will thin out once mixed in with the zoodles
