Sausage Broccoli Bean Lasagna

Easy stovetop lasagna recipe – Pair it with a side of garlic bread and a glass (or two) of red wine, of course!

Ingredients

  • 1 lb ground Italian sausage
  • 1 box lasagna noodles
  • 12 oz bag of frozen broccoli florets
  • 1 yellow onion
  • 1 tbsp minced garlic
  • 1 tbsp olive oil
  • 15 oz can of great northern beans
  • 24 oz jar of pasta sauce of your choice
  • salt & pepper to taste
  • parmesan cheese if desired

Instructions

  • Break the lasagna noodles into pieces (I broke each noodle into 3-4 chunks)
  • Boil the noodles according to the package. Once they are almost done, add the frozen broccoli to the same pot and drain once cooked. Set aside
  • Heat olive oil in a sauce pan over medium heat. Add ground sausage and break up into small pieces. Once meat is almost browned, add in chopped onion and garlic
  • Rinse and drain the can of beans and add to the sauce pan and cook until beans are warmed
  • Pour the jar of pasta sauce over the sausage, onion, and beans
  • Add salt & pepper
  • Pour the sauce mixture into the pot of noodles or scoop noodles onto a plate and add sauce on top
  • Sprinkle with parmesan, if desired
