This zucchini and onion dish will melt in your mouth! The vegetables are so soft and perfectly cooked through. It’s even better if the zucchini comes straight from a home garden. My mom used to make this side dish all summer long with the zucchini she’d grow and have us pick from our backyard. I hope your family enjoys it just as much as mine does!

  • 1 ½ lbs zucchini halved & cut ¼" thick (I use 2 medium/large zucchinis)
  • 1 small yellow onion
  • 2 tbsp butter
  • salt & pepper


  • Cut the zucchini long ways and then chop into ¼" thick pieces
  • Slice the onion into wedges
  • In a skillet, heat the butter over medium heat
  • Add the zuchhini and onion to the skillet. Season with salt & pepper
  • Cover with a lid, stir occasionally so the vegetables do not burn. Cook for approx. 15 min or until the vegetables are very soft
